Matcha Christmas Cookies


Christmas is right around the corner and with it comes trees, lights, Michael Bubblé and... Christmas Cookies!! These soft and chewy Matcha Christmas cookies will have you (& santa!) dreaming of a green Christmas.

THESE MATCHA COOKIES ARE:

FOR THE GLAZING

INGREDIENTS 

  • 2 cups powdered sugar

  • 1 tablespoon of vegetable milk

  • 1 tsp lemon juice

  • A little more vegetable milk

INSTRUCTIONS

  1. In a bowl, mix all the ingredients. Add plant milk, ½ tsp. at a time until firm glaze.

  2. Transfer to a pastry bag.

FOR THE COOKIES

INGREDIENTS 

  • 2 cups of all-purpose flour

  • 1 tsp baking powder

  • 2 tsp. matcha for recipes

  • ½ tsp salt

  • 1 cup of sugar

  • ½ cup butter-flavoured or neutral coconut oil

  • ¼ cup of vegetable milk

  • 1 tsp vanilla

INSTRUCTIONS 

For the Matcha Christmas Cookies

  1. Mix flour, baking powder, Matcha and salt. Set aside.

  2. Cream the sugar and coconut oil with a whisk or electric mixer.

  3. Add the vegetable milk and vanilla and whisk until the mixture is homogeneous.

  4. At low speed, add one third of the dry ingredients. Stir in the remaining dry ingredients with a spatula and then with your hands to form a paste. If the paste does not seem to form easily, add 1 tbsp. of extra vegetable milk.

  5. Wrap the dough in plastic wrap and refrigerate for a minimum of one hour.

  6. Preheat oven to 325°F.

  7. Flour a clean surface.

  8. Cut the dough in half and set half aside in the refrigerator.

  9. Using a floured rolling pin, roll out the dough into a disc about 3 mm thick, making sure to turn the dough over to prevent it from sticking.

  10. Cut out the cookies using a cookie cutter in the shape of a fir tree, snowman, flakes, stars…

  11. Transfer the cookies to a baking sheet and place in the freezer for 15 minutes. 

  12. Place in the oven for 8-12 minutes, then allow to cool completely before decorating.

  13. Repeat with the second half of the dough or freeze for later.

  14. Decorate cookies as you wish!

 

Note:

  • For a gingerbread flavor, Matcha Chai can be used instead of Matcha for recipes.

  • For chocolate fans, it is possible to replace the frosting with white or dark chocolate, which marries perfectly with Matcha.
